Spinach Cucumber Salad: Unless I’m on vacation or I know that I won’t be home for more than a few days. I almost always have spinach and cucumber in the fridge. Why? I love eating spinach and cucumber salads, it’s the perfect side dish to any protein or eat it as a main dish all by itself. I made this dish purposefully simple with ingredients you can find in most kitchen. The only difficult ingredient to find would be apple cider vinegar but if you’ve gone Paleo then ACV is probably always stocked in your kitchen.
Note: If you’re eating this salad as part of the Paleo Diet Plan then you will be eating it as a side dish.
Spinach Cucumber Salad
Total Time to Make: 10 minutes
- 1 cucumber, sliced into 2 mm pieces
- 4 cups of spinach, or about 2 handfuls
- 1/2 lime
- 1 tablespoon apple cider vinegar
- Sea salt and pepper to taste
- Put all ingredients into a large mixing bowl and toss.
If I’m eating this after a workout or if I’m by myself I just eat it straight from the mixing bowl.
